Serious Eats posted a recipe for Lemon Chicken with Rice today and it sort of fit with the ingredients I had on hand and the general theory of what I was planning on doing with them, so I gave it a go.

Verdict? Very nom. Definitely comfort food, but I think throwing even more veggies in with the rice would make it a lighter dish. Recipe follows, with a few comments.

Serves 4, took me a little under an hour working from frozen chicken breasts. The sauce is thinner than a gravy - Serious Eats describes it as "soupy," which is unfortunately unappetizing but does give you an idea of what you're aiming for. The recipe makes a LOT of sauce; if you don't want a lot, you could almost certainly halve the recipe. Part of what's nom about this though is serving it hot in a bowl and letting it mix all together, so, *shrugs*.

So, I'm wojelah over on DW now as well - truthfully, I'll probably be using LJ as home base for a while yet and just cross-posting, until RL affords me the time to sit down and play around with DW options. I've been tracking many of you with an OpenID account, but if you're there, let me know who you are?

Also, not that I think there are many, but yesterday was apparently Lurker Amnesty Day - and I am, as always, running late. Drop a line and say hi, if you like! I love new people and saying hello - just know that while I have the best of intentions w/r/t comments, I sometimes (kind of appallingly often) fail at replying quickly.

I am "that woman" - the fat lady you look away from as she comes down the airplane aisle. The one it's apparently okay to humiliate in front of an entire airplane full of people - because, you know, I'm fat, and therefore a) stupid, b) broken, c) to blame, or d) all of the above.

Still think I'm kidding? Look at the serious evidence Air Canada submitted in its attempt to work around Canada's one-person, one-fare ruling.

A couple of people asked whether there's some formal protest afoot. I haven't seen much of one; I know that NAAFA (the National Association to Advance Fat Acceptance) linked to a petition. There's a link to it here, but it's been deactivated. It does, however, contain contact information for United. There is another petition afoot here.

But you can also just -talk- about it; I've seen a few people mention it on LJ, including [livejournal.com profile] cruisedirector, but I've heard very, very little about it otherwise. Post about it. Link to it. It's a sign of a broader problem, as I've said before: the failure to treat every person with respect and dignity.

I don't know if you've been following this. kateharding.net has a number of posts on the subject, and I recommend them. The short version: United, like Southwest, is implementing a policy where fat people on full flights will 1) be bumped from the flight and 2) possibly required to buy a second ticket.

I have, oh, about sixteen zillion problems with this, and I haven't posted before this because really, I didn't know where to start. I've stewed long enough, I think, so here goes: )

Happy Meme - started a week ago Monday - wow, that was a fast week.

Eight happy things, in no particular order, for eight days of happy.

1) I left work before 7 PM - I love my job, but that's unusual, and it was just very, very pleasant.

2) Susan Boyle.

3) Dinner: my mom's chicken soup and an avocado with lemon pepper.  Plus a cupcake. NOM.

4) Posting more Criminal Minds fic, this time co-ficced with [livejournal.com profile] smittywing and very graciously beta'd by [livejournal.com profile] shetiger .

5) Two full nights of really good, really sound sleep.

6) My new recipe box (aka, etsy strikes again).

7) Hugh Jackman (I keep going back to this picture and just -staring-. Goodness me.)

8) Only TWO WEEKS till The Language of Bees comes out!

Hmmm. Mondays are hard for happy, but I think today, my happy is this recipe. So good, so easy - and you can make a bunch, which means in this case that my dad is a -really- happy person.

Today? Cousins.

I grew up with a very large and very close extended family on my mom's side. I'm the third eldest of the cousins and the eldest girl (the oldest has nine years on me and the youngest, the only other girl besides my little sister, is seventeen years younger). Growing up, we lived 15 minutes from a street where my mom's older brother, my mom's younger sister, and my grandparents all lived in a row - and my grandmother's sister lived right across the street. I can still remember shuttling back and forth among houses, thronging as warranted. Two years ago at Easter, the Cousins realized we outnumbered the adults and claimed the dining room as the Kids' Table (the previous kids' table being the smaller table in the kitchen), and so it remains.

We give each other crap, we break out the Wii and the board games, we sit around and shoot the breeze - ALL of us, the full age range, including, now, my little brother's wife - and next weekend we're all getting together to go see a movie. Tonight my sister brought her SO home for the holiday, and he fit right in at the Cousins' Table - a major test :D.

I think my grandparents, who were amazing people, must be quite pleased that we've evolved into such a loud and unruly bunch.

I purposely spent six years living other places, because my family (nuclear and extended) is such an easy place to be, I'd never leave my comfort zone. Now that I'm back, I'm incredibly grateful - the Cousins will morph and change, but with all but three of us over the age of twenty, I think we've established something that will thrive, even as life happens, and I am glad to be back and closer and more easily able to enjoy it.

Today's is -easy-. WHO! WHO WHO WHO! It has been FAR too long, and I cannot wait to see it! (Tennant in Hamlet was a thoroughly acceptable intermezzo, however. Between 1) an excellent performance and 2) the OMG INCHES FROM MY HEAD factor, it was pretty awesome.)
